Rava Ladoo

Rava Ladoo is a traditional Maharashtrian sweet dish made with roasted rava, coconut, sugar and dry fruits. This is a dish prepared during festival time and functions at home to complete with a simple dessert. I, myself love this ladoo, but nothing to compare with my sweet tooth husband, he loves this ladoo. Try on my friends, this is a quick and easy recipe from me to all... Happy Cooking :)


Ingredients:
Rava (sooji) - 1 cup
Sugar - 1 cup (powdered)
Coconut - ½ cup
Milk - ¼ cup (warm milk)
Ghee - 4 tsp
Cardamom powder - 1 tsp (crushed)
Cashew Nuts - 1 tbsp
Raisins - 1 tbsp

Preparation:
- Roast/fry cashew nuts and raisins in 1 tsp ghee and keep aside.
- In a kadai, pour 2 tsp ghee and roast the rava till you get a roasted aroma (approximate 3-4 mts). Once done off flame and let cool.
- Fry the grated coconut in 1 tsp ghee for 2 minutes and keep aside (the coconut should not be brown).
- In a large bowl, add the roasted coconut, rava, cashewnuts, raisins, cardamom powder, sugar and mix well.
- Pour milk little by little to the bowl, mix well and shape ladoos. Keep aside for few minutes for the ladoos to harden.

Note:
- Sugar can be added according to taste. I used 1 cup, i have sweet tooth hubby at home.
- Add milk little by little to the mix. Adding milk at one time can make the ladoo mix to be watery.
- I could make 22 ladoos with the above measurements.
- You can refrigerate ladoos for a weeks time and consume.

Beef Curry

Today I am posting is a easy and one of my family favourite Beef curry. This is often cooked at my place and my hubby and dad love eating just with plain rice and no side dishes. This a very easy recipe with few ingredients. This is my family way of cooking beef curry. My mum uses the same ingredients and for sure tastes the same. Try on and sure you will love this dish.

Ingredients:
Beef - 500 gms (cut to small cube size)
Onions - 2 medium
Green chillies - 2 nos (slit into half)
Garlic - 4 pods
Ginger - 1 small piece
Tomatoes - 1 medium
Turmeric powder - ¼ tsp
Red chilli powder - ½ tsp
Coriander powder - 2 tbsp
Meat masala - 1 tbsp
Jeera powder - ¼ tsp
Cloves - 2 nos
Cinnamon - 1 piece
Curry leaves - handful
Water - 4 cups
Salt - to taste

Preparation:
- Heat oil in a cooker and fry cloves and cinnamon.
- Add onion, ginger, garlic, tomato, green chilli, curry leaves and saute for 2 minutes.
- Add turmeric powder, red chilli powder, coriander powder, jeera powder, meat masala and saute for 3 - 4 minutes.
- Add beef and mix well. Add salt and water and let the beef cook for at least 8 - 10 whistle in the cooker.
- Once done, open cooker and let simmer on heat for 5 minutes till water reduces to the desired consistency. Delicious Beef curry is done.
- Serve hot with ghee rice, paratha, bread or chapathi.

Note:
- Adjust spice and salt according to taste.
- Garnish with coriander leaves or curry leaves as taste.
- You can also add boiled cut potatoes to the curry if desired.

Chicken Fried Rice

Happy weekend Friends !!!!!!
Today is a simple and wonderful recipe of Chicken Fried Rice which always please everyone at home and my friends. It's easy to make and just needs few ingredients. You can also cook this with leftover rice from other day or use freshly cooked rice and is the perfect way to cook with chicken, vegetables and eggs. This dish is often cooked in my house as I and my hubby love fried rice with any non-veg side dishes. I personally feel this a healthy food as it includes vegetables too. You can also use mushrooms and peas in your fried rice. Its all up to you my friends. So, here is my fried rice recipe to all my loved once. Enjoyeeeeeee


Ingredients:
Jeera rice - 3 cup
Chicken - 400 gms
Egg - 1 nos (scrambled)
Onion - 1 cup (chopped)
Carrot - 1 cup (chopped)
Beans - 1 cup (chopped)
Capsicum - 1 cup (chopped)
Ginger - 1 small piece (chopped)
Garlic - 3 pods (chopped)
Black Pepper powder - 4 tbsp
Soya sauce - 2 tbsp
Chicken stock - 2 tbsp
Spring onions - for garnishing
Oil - 2 tbsp
Salt - to taste

Preparation:
- Rice should be washed and well drained. Cook rice with salt and let cool completely.
- Cook chicken with salt and 1 tbsp of pepper. Shred chicken and keep aside.
- Scramble egg with pinch of salt, pepper and keep aside.
- Heat oil in a pan, add ginger, garlic, onion, carrot, beans, capsicum, salt and saute for a minute.
- Add 2 tbs of chicken stock and cook covered for 2 mts on medium flame. (The vegetables should not be over cooked)
- Open lid and add chicken pieces, salt, pepper powder, soya sauce and keep sauteing for 2 mts on high flame.
- Now add the rice, scrambled egg and mix well on medium flame till rice is mixed well with vegetables, egg and chicken.
- Garnish with spring onions. Serve hot with chilli chicken or dragon chicken as side dishes.

Note:
- Rice water ratio is 1 cup rice and 2 cup of water (1:2). You can also use basmati rice.
- You can add any color capsicum as per your choice. I used green capsicum for this recipe.
- I have not used egg while preparing rice. But i have added egg in the recipe (its your choice to add or not to add egg).

Dragon Chicken

I have posted Chicken fried rice and i am sure you will have questions, what will be the side dish for today, Is that a question friends? Don't worry, I am giving you just another easy Indo Chinese chicken recipe, named "Dragon Chicken". This is a recipe i got from a cookery show and i added few more ingredients to make it tasty and the way I like it. And believe it or not, it tastes yummmm... I am sure this is not the exact way to cook dragon chicken, but it very similar in taste. Try it and your family is going to love this dish :) :) Happy Cooking Friends...


Ingredients:
Chicken - 500gms (cut into small cube pieces)
Onion - 2 nos (cut into cube shape)
Capsicum - 2 nos (cut into cube shape)
Soya sauce - 2 tbsp ( 1 tbsp for marination + 1 tbsp for cooking)
Tomato sauce - 2 to 3 tbsp
Green chilli sauce - 2 tbsp ( 1 tbsp for marination + 1 tbsp for cooking)
Ginger and garlic paste - 2 tbsp
Red chilli powder - 1 tbsp
Turmeric powder - A pinch
Oil - 2 tbsp ( For cooking)
Oil - for frying the chicken
Salt to taste
Tabasco sauce - 1 tbsp ( optional - for extra spice to the dish)
For Garnishing:
White sesame seeds, spring onions, cashews or Dill leaves.

Preparation
For marination:
- In a bowl marinate chicken pieces with 1 tbsp of soya sauce, 1 tbsp of green chilli sauce, ginger garlic paste, red chilli powder, turmeric powder and salt. Keep this marinated chicken for half to one hour.
- Fry the marinated chicken in oil till cooked and golden brown in color (make sure the chicken is not burnt or crispy).

Cooking procedure
- In a kadai, pour oil, add onions and capsicum and saute till they are translucent.
- Add 1 tbsp of soya sauce, tomato sauce, 1 tbsp of green chilli sauce, salt and saute well.
- Add Tabasco sauce if required. Now add the fried chicken and saute for 2 mts.
- Cover and cook the chicken at low flame for at least  3 to 4 mts (take care the preparation is not burnt).
- Garnish with white sesame seeds, cashew, dill or spring onions as desired.  
- Serve hot with Chicken / Vegetable fried rice or Chapathis.
