Pepper Garlic Chicken

This is a special dish from my side and I named it “Pepper Garlic Chicken”. This recipe is one of my special dish and yes, a very spicy recipe. A very delicious dish with less ingredients and simple preparation. This is one of the dish I prepare during my hostel days with friends and they love it. I recommend all my friends to try this recipe and give me comments. Try this recipe for this weekend and enjoy.


Ingredients:
Chicken - 1kg
Onions - 2 medium (chopped)
Green chilli - 2 nos (slit to half)
Garlic - 20 nos (julienne slices)
Tomato - 1 small (chopped)
Turmeric powder - 1 tsp
Pepper powder - 5 tbsp
Water - 1 cup
Salt - to taste
Oil - 3 tbsp
Curry leaves - 1 string (for garnishing)

Preparation:
- Heat oil in a kadai, add sliced garlic and saute for 2 mts.
- Add turmeric powder and saute for a minute.
- Now add the Onions, green chillies, tomatoes and saute till translucent.
- Add pepper powder, salt and saute for a minute.
- Add chicken and mix well with the masala. Pour water and let chicken get cooked for 5 minutes on medium flame with lid on.
- Once the chicken is cooked, open lid and let simmer for a minute or two.
- Off flame, garnish with curry leaves and serve hot with rotis and rice.

Note:
- This a spicy recipe. Please adjust spice accordingly.
- This recipe can be prepared with or without gravy (Semi gravy).

Cheesy Chicken Pie

Cheesy Chicken Pie


Ingredients for white sauce:
50 grams of butter
25 grams of plain flour
500 ml of milk
salt and pepper to season (only add if its savoury!)
Fresh cream - a part of milk ( optional )
Oregano powder - to add flavour

Method to prepare white sauce:
Put all the ingredients into a pan on a medium heat whisking constantly for 6 mins till the sauce will thicken. Continue whisking it until it doesn't taste floury anymore. Add oregano powder to add flavour (to be added only once the sauce is out of flame).

Ingredients for the pie:
Chicken - shredded (cooked with pinch of turmeric, pepper and salt)
Carrot - 2 nos (chopped into pieces)
Capsicum - 2 nos ( chopped into pieces)
Onions - 1 nos (chopped into pieces)
Cheesy macaroni - 2 pack ( cook and keep aside)
Pepper powder - 2 tablespoon
Butter for cooking
Bread crumbs for the crust.


Preparation:
- Pour butter in a pan, add carrot and saute for 5 mts. Now add capsicum, onions and saute till transparent. Add pepper powder and saute. Toss the shredded chicken, macaroni and saute for 5 mts.
- Take a deep dish pan and butter the sides. Put the cheesy chicken macaroni mixture and pour the white sauce like a layer (sauce should cover the mixture). Now add bread crumbs on top of the sauce (crumbs should cover the sauce like a thick layer)
- Preheat oven at 180 degree and cook the pie for 20 mts till the crust is dark brown in color. 
- Simple and delicious cheesy chicken pie is ready to serve. Serve hot or cold as desired.

Chicken Ularth

Chicken Ularth, a traditional chicken recipe. There are different ways to prepare ularth. This is one of my experiment with chicken ularth recipe. Just some add on spices and ingredients. Try this recipe and enjoy the weekend...


Ingredients:
Chicken - 500gms
Onions - 4 nos (medium size)
Green chillies - 3 nos (slit into half)
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Tomato - 1 nos
Curry leaves - handful
Turmeric powder - ½ tsp
Coriander powder - 2 tsp
Red chilli powder - 2 tsp
Jeera powder - ½ tsp
Garam masala powder - 2 tsp
Salt - 2 taste
Coconut oil - 2 tbs

Preparation:
- Heat 2 tbs oil in a clay pot and add curry leaves, green chillies and saute for a sec.
- Add onions, ginger paste, garlic paste, curry leaves and fry till the onions are translucent.
- Add turmeric powder, chicken and saute for 3 mts. Add salt at this stage.
- Now add red chilli powder, jeera powder, garam masala powder, coriander powder and saute well. Add tomatoes now and saute for a sec.
- Cook chicken with lid on without adding water. Stir the chicken in between.
- Once the chicken is cooked, open lid and let the chicken get roasted to brown color.
- Once done add one tbs oil and garnish with curry leaves and serve hot.

Note:
- Make sure that no water is added in the recipe. Chicken gets cooked in the onion gravy.
- Serve as a side dish with rice, ghee rice and a main course with chapathi and kerala porotta.
- Adjust salt and spice as per taste.

Idli Sambar (Potato Sambar)

Sambar... our kitchen is empty without cooking sambar at least once or twice in a month. Sambar is a vegetable stew cooked with dal and tamarind water which is popular in south india and towards north side of Kerala. Sambar is a staple curry towards south india as like rice.

The below sambar recipe is the one cooked by my mom and grandmom. This is one of the easiest way to cook sambar at home. This recipe is mainly prepared for Idli, Dosa and rice in our house. I am very happy to share my moms special sambar recipe to all. So, here you go my friends the delicious and easiest sambar recipe. Enjoyeeeeee….


Ingredients:
Tur dal - 1 cup
Onions - 1 medium (chopped)
Green chillies - 3 nos (slit into half)
Garlic - 3 pods (chopped)
Ginger - small piece(chopped)
Tomato - 1 nos (chopped)
Potatoes - 2 nos (cut to cube pieces)
Turmeric powder - ¼ tsp
Red chillie powder - 1 tsp
Coriander powder - 1 tsp
Curry leaves - 1 string
Water - 1 ½ cup
Tamarind water - ½ cup (valan puli)
Sambar powder - 3 tbsp
Mustard seeds- ½ tsp
Hing - a pinch
Curry leaves - 1 string (for tempering)
Dry red chillies - 3 nos
Oil - 2 tbsp

Preparation:
- In a cooker, add dal, onions, green chillies, garlic, ginger, tomatoes, potatoes, turmeric powder, red chilli powder, coriander powder, curry leaves, salt, water and let cook for 2 whistles and let cool.
- Once the dal is cooked, add tamarind water, curry leaves and let boil for few minutes.
- Add the sambar powder and let boil for a minute or two. Once done, switch off flame.
- In a kadai, heat oil splutter mustard seeds, hing, dry red chillies and curry leaves.
- Pour the temper to the dal.
- Easy idli sambar/potato sambar is ready to serve.

Note:
- Any vegetables can be added to the sambar for taste. I added potatoes and green beans.
- Tamarind water can be added according to taste.

Potato Vendakkai Fry (Potato Ladies Finger Stir Fry)

Potato Vendakkai fry is a another dish i love to cook and eat.  A very easy dish to prepare during easy cook days. I and my son like vendakkai and my hubby likes potatoes, so this is a perfect side dish in our family. The ingredients are very simple and takes very less time for the preparation. This side dish can be served with rice and with chapatis for dinner. I am sure all will love this dish and we do.


Ingredients:
Vendakka (Okra/Ladies Finger) - 2 cups (cut into 1 inch pieces)
Potatoes - 2 medium (cut to small cube pieces)
Onions - 1 large (chopped)
Tomato - 1 small (chopped)
Jeera - ¼ tsp
Turmeric - ½ tsp
Red chilli powder - ¼ tsp
Coriander powder - ½ tbsp
Salt - to taste
Oil - for frying
Curry leaves - handful

Preparation:
- Cook potatoes with a pinch of turmeric powder, salt and keep aside (potatoes should not be mushy)
- Fry vendakkai in oil and keep aside.
- Heat oil in a pan and splutter jeera.
- Add onions and saute till translucent. Add tomato and fry well.
- Add turmeric powder, coriander powder, red chilli powder and saute for a minute. Add salt to taste.
- Add cooked potatoes and vendakka and let cook for 5 mts on medium flame (stir in between and add oil if required).
- When cooked, garnish with curry leaves. Serve with rice, chapatis or parathas.

Kachiya Moru Curry

Moru Curry or Moru Kachiyathu is a simple curd curry prepared in many houses in Kerala. This curry is very good for kids which helps them in digestion and prevents them from catching a cold due to plain curd. My son loves this curry and this is one of his favourites. This a one curry you can have with a simple side dish and as i mentioned earlier, just with a Potato stir fry or Potato Mezhukkupuratti.

There are different variants of this curry. Here in introduce all my friends to a simple and delicious Kachiya Moru Curry. Have a Great Weekend Friends.



Ingredients:
Thick curd - 2 cups
Water - 1 cup
Black pepper powder - 1 tsp
Turmeric powder - ½ tsp
Green chillies - 1 nos (chopped)
Garlic - 1 pod (chopped) - Optional
Dry red chillies - 2 nos
Curry leaves - handful
Mustard seeds - ¼ tsp
Oil - 1 tbsp
Salt - to taste.

Preparation:
- In a bowl add 2 cup curd, 1 cup water and beat well. Add salt, black pepper powder to the curd and beat for a minute again.
- Heat oil in a pan, splutter mustard seeds, dry red chillies, curry leaves, green chillies, garlic, turmeric powder and saute for a minute.
- Reduce flame completely, pour the curd to the kadia and mix well for just 2 to 3 sec. (Make sure you don't boil the curd)
- Off flame and let cool. Serve with white rice and potato mezhukkupuratti (potato stir fry).

Potato Mezhukkupuratti (Potato Stir fry)

Potato Mezhukkupuratti/Potato Stir fry is the easiest dish to prepare (Mezhukkupuratti means smeared with oil). This dish is also called the bachelor recipe. I prepare this dish often, as and when I am lazy to cook and have some leftover moru curry in my fridge for the day. This dish is prepared towards the south part of Kerala and i personally knew this dish from my hubby. This dish is perfect with rice and moru curry.




Ingredients:
Potatoes - 5 medium sized
Salt - to taste
Turmeric powder - ¼ tsp
Coconut oil - 1 tbsp
Mustard seeds - ½ tsp
Kashmiri Red chillies - 4 nos
Curry leaves - handful

Preparation:
- Cut potatoes to small cubes (1/2 inch). Boil potatoes with salt, turmeric, little water and keep aside.
- In a pan, heat oil, splutter mustard seeds, red chillies and curry leaves.
- Add the boiled potatoes and saute for 2 mts.
- Serve hot with rice and moru curry.
